The under-belly is the softest and most delicate part of the Albacore long finned tuna or 'Bonito del Norte'.
This is an area which forms a triangle situated on the under part of the fish near the head. The distinction of this part is due to its characteristic flavour having a finer taste, being more delicate than the rest, resulting in an exquisite delicacy.
Ideal for accompanying salads, pintxos or just to enjoy on its own.
