Sheep's cheese balls are a product made with a kind of cheese produced by lactic curing of 100% Latxa sheep´s milk.
It is characterized by its moldy white proteolysis rind, creamy texture and slightly acidic flavor with a slight ammoniacal touch. As it evolves, said characteristics are accentuated, with the optimum moment of consumption around 20-25 days from the day of its elaboration.
Ideal for consuming 'as it is' and goes well with fruit and nuts, being a perfect complement as an ingredient in salads as well as grated.
