Pil-pil is a hot, creamy sauce. Olive oil is an essential part of its preparation, as it helps to form a creamy texture when combined with the jelly from the fish.
To obtain this jelly, the fish must first be cooked in olive oil at a low temperature. The noise made during this confit, produced by the water released from the fish and by the bubbles of jelly that rise and pop on the surface, is what gives this dish its name.
Traditionally, the sauce is made in an earthenware dish, using circular movements.
Store in the fridge between 0ºC and 4ºC. When ready to eat, perforate the cover by making several holes in the film and heat in the microwave for 3 minutes, at 1000W.
