The Albacore Yellowfin Tuna or white tuna, is characterized by its yellow fin (from which it gets its name), and is the variety with the highest capture rate. Because of this, it is the most common variety used in conserves. It is a medium quality variety that is not as white or fine textured as the Albacore long finned tuna, but is also well known for its pleasant taste.
